soy sauce marinated raw salmon
Soy sauce marinated salmon is probably the most addictive thing you'll ever eat. Best served with rice, sliced onions and chilli.

Ingredients
Quantities are shown as originally provided.
- 500g sashimi grade salmon
- 1/2 cup light soy sauce
- 1/4 cup mirin
- 1 tbsp sugar
- 1 cup water
- 1/2 onion
- 1 green onion
- 2 chilli
- 3 garlic
- 1/2 onion, sliced
- 2 chilli pepper, sliced
- 1/2 lemon, sliced
- white rice
- chopped green onions

In a small saucepan, add soy sauce, mirin, sugar, water, onion, green onions, chilli, garlic and water. Bring to a boil for 2-3 minutes. Set aside and let it cool down completely.

In an airtight container, add a layer of sliced onion, followed by sliced raw sashimi-grade salmon, lemon slices and chilli pepper. Add the soy sauce marinade, making sure it completely covers the salmon. Refrigerate and let it marinate overnight.

Serve salmon on a bed of white rice with chilli peppers, onions, salmon roe, or whatever you like!
