Beef Wontons (Crispy Fried)

Ingredients
- 1/3 cup cilantro stems
- 1+1/2 tsp ginger
- 1 tbsp garlic
- 8 oz ground beef
- 1/2 tsp ground white pepper
- 1 tbsp tapioca flour
- 1 stalk green onion
- 1+1/2 tbsp oyster sauce
- 1/2 tbsp soy sauce
- 1+1/2 tsp salt
- 1 tsp sugar
- 1 egg
- Oil. Enough for deep frying.

Combine garlic, ginger, white pepper, and cilantro in a small mortar and pestle. Pound into a rough paste.

In a large bowl, combine the main ingredients for the filling. These are ground beef, chopped green onions, light soy sauce, salt, sugar, tapioca starch and egg. Mix until well combined.

Heat oil on high or medium-high heat. Wait until the oil is hot, then carefully drop in the wrapped wontons. Don't overcrowd the pan. Fry them for less than a few minutes or until golden brown.

Remove them to a paper towel-lined plate and work on the next batch until the remaining wontons are cooked.

Once cooked, serve the beef wontons hot with your favorite dipping sauce, or add them to soups and stews for added flavor and texture.
