Chinese Tomato Pork Bone Soup [番茄豬骨湯]

Ingredients

  • 600 g pork ribs (or sub with chicken drumsticks)
  • 4 medium tomatoes
  • 1 sweetcorn
  • 2 carrots
  • 1 scallion (optional)
  • 2 tbsp ketchup (optional)
  • 1-2 tsp salt (or more to taste)
  • 8 cup water (or chicken/ pork stock)

Instructions

    Add pork ribs to a pot and cover with water. Bring to a boil, then drain pork through a strainer. Rinse the pork with clean water to remove the scum.

    In a large pot, heat some cooking oil and sauté your scallions and tomatoes to bring out the flavour. Sauté for a few mins until the tomatoes have softened.

    Add water (or stock), pork ribs, corn and carrots. Cover the lid, turn to high heat and bring the soup to a boil.

    Once the soup has boiled, reduce to medium-low heat and simmer for about an hour.

    Lastly, stir in salt to taste and enjoy!
