Agrodulce Burrata

Agrodulce is a sticky-sweet sauce made from roasting fruits, vinegar and spices that's spooned over meats, cheeses with nuts or toasted bread.

Ingredients

  • 8 oz burrata cheese (2 balls)
  • 2 cup red grapes
  • 1 cup blueberries
  • 1 tbsp olive oil
  • 1/4 red onion (thinly sliced)
  • 1 lemon (juice and zest)
  • 1/4 cup honey
  • 1/4 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 1 tsp red pepper flakes
  • 1/2 cup golden raisins
  • 1/4 cup pistachios (chopped)
  • toasted bread or crackers of choice

Instructions

    Preheat oven to 450°F.

    In an oven-proof skillet add the grapes, blueberries, olive oil, onion, juice and zest of lemon, honey, brown sugar, balsamic vinegar and red pepper flakes. Stir to mix.

    Place in the oven to roast for 15 minutes. Grapes and blueberries should start to crack and pop while mixture thickens. Remove from oven (if needed, reduce more on stovetop over medium heat 5 minutes depending on fruit water content) and stir through the raisins. Let cool and thicken, season to taste with salt.

    Split each burrata cheese ball and lay open-face on a plate. Spoon agrodulce over cheese and top with chopped pistachios and a drizzle of good olive oil. Serve with toasted bread or crackers of choice.
