Easy Cherry Chutney

Ingredients

- 1 TBSP coconut oil or oil of your choice
- 1 cup ripe cherries
- 1 onion
- 1 inch grated fresh ginger (about 2 tsp grated ginger)
- 2 lg clove garlic
- 1/4 cup maple syrup or honey
- 1/4 cup red wine vinegar
- 1/2 tsp coriander
- 1/2 tsp smoked paprika
- 1/4 tsp cardamom
- 1/4 tsp cinnamon
- 1/2 tsp cayenne powder
- salt and pepper to taste

Wash and pit the cherries.

Peel and chop up the onion, ginger, and garlic.

Add the oil to a small, heavy-bottomed pan and place it on a stovetop set at medium heat.

Add in the onion, garlic, and ginger and sauté for about 5 minutes, stirring often.

Then add in the cherries, maple syrup, red wine vinegar, coriander, smoked paprika, cardamom, cinnamon, and cayenne.

Cover the pan and turn and let the ingredients cook for about 5 minutes.

Then, turn off the stove and uncover the pan.

Now, you have 2 options. One is to let this cool and serve it as is. Or, use an immersion blender or blender to blend this up so it's more like a chunky spread.
