- 1 vanilla bean
- 2 1/2 teaspoons gelatine powder
- 1 tablespoon water
- 1 1/2 cups heavy cream
- 1 1/2 cups milk
- 4 tablespoons caster sugar
- 4 fresh strawberries (for serving)

Split the vanilla bean with a sharp knife and scrape the seeds from the inside.

Combine the gelatin powder with 1 tablespoon of water in a small bowl. Stir well and set aside.

In a saucepan, add the heavy cream, milk, vanilla seeds, and sugar. Bring the mixture to a boil over medium heat, stirring gradually with a spatula until the sugar has dissolved. Then reduce the heat.

Add the gelatin mixture to the cream mixture and continue stirring until the gelatin has completely dissolved. Remove the saucepan from the heat.

Strain the mixture and carefully pour it into individual cups or ramekins. Use a spoon to skim off any bubbles on the surface. Chill the panna cotta in the refrigerator for at least 4 hours or overnight.

When ready to serve, run a small knife around the edge of the ramekin or cup to loosen the panna cotta. Briefly dip the ramekin in hot water to help release it easily onto a plate. Serve immediately with fresh strawberries and syrup on top.
