Malai Chicken Tikka
Malai Chicken Tikka is a recipe for juicy chicken skewers marinated with mild spices, yogurt, cream, gram flour and various meat tenderizers.

Ingredients
Quantities are shown as originally provided.
- 2 lb chicken tenderloins
- 2 tsp garlic paste
- 2 tsp ginger paste
- 1/4 cup cooking oil
- 2 serrano chilies ((see notes))
- 1 lemon
- 1 kiwi ((see notes))
- 1/2 cup full fat yogurt
- 2/3 cup heavy whipping cream
- 2 tsp salt
- 1 tsp garam masala
- 2 tsp cumin powder
- 1 tsp white pepper
- 1 tsp black pepper
- 2 tbsp gram flour
- 1 piece charcoal ((see notes))
- 1/8 cup cooking oil

Cut each tenderloin into 2 pieces and set aside.

Place your wooden skewers in water. (see notes)

Chop and crush your serranos into a paste. (see notes)

Peel and mash the kiwi to make a paste. (see notes)

Add all of the ingredients into a mixing bowl and whisk well.

Add the marinade to the chicken, cover, and refrigerate.

After 30 minutes, remove the chicken and add it to the skewers.

Preheat your grill to 450 degrees, then reduce the temperature to 375 degrees to cook the skewers. Turn the skewers at intervals and use a thermometer to check for doneness - 165 degrees fahrenheit. (see notes)

At the time that you start cooking the chicken, take a single charcoal and light it on a gas stove or burner.

When the coal is well-lit, it should be grey and ashy on at least 80% of its surface place it in a small bowl.

Place the chicken in a cooking pot, along with the bowl.

Pour the oil on it slowly, and once the charcoal starts smoking, place the lid on it and let it sit for 10-15 minutes.

Discard the charcoal and oil and serve the chicken with your favorite sides.
