Green Pea Curry (with frozen green peas)
Flavorful and aromatic, this Green Pea Curry is an easy, tasty, one-pot side dish that will pair beautifully with everything from rice to roti.

Ingredients
- 3 tbsp olive oil
- 12 oz pkg frozen green peas
- 2 onions (yellow or red)
- 4 clove garlic
- 1 inch chunk ginger
- 4 tsp powdered coriander
- 2 tsp powdered smoked paprika
- 1 tsp powdered cayenne
- 1/4 tsp powdered cardamom
- 1/4 tsp powdered cloves
- 1/4 tsp powdered cinnamon
- 1 tsp powdered turmeric
- 1 cup Coconut milk
- 1 cup Fire roasted tomatoes
- 1 cup water
- salt and pepper to taste
- Parsley & chili flakes for garnish [OPTIONAL]

Peel the onions, ginger, and garlic, and then chop them up as fine as possible.

Add the olive oil to a large, heavy bottom pan and add in the chopped onions, ginger, and garlic, and sauté for about 10 minutes, stirring often.

Then add in the coriander, smoked paprika, cayenne, cardamom, cloves, cinnamon, turmeric, Coconut milk, the Fire roasted tomatoes, and water and stir well until all ingredients are seamlessly incorporated - about 2 minutes or so.

Add in the package of frozen peas and stir well.

Then, cover the pan and let simmer on a low flame/temperature for about 5–7 minutes.

Season with salt and pepper to taste.

Garnish with parsley and chili flakes if desired and serve warm.
