This is a Thai sticky rice recipe using a pressure cooker for days when you don't have time for the rice to soak overnight.

Ingredients

Quantities are shown as originally provided.

  • 1 Cup of Glutinous Rice (also known as Thai Sticky Rice)
  • 2/3 cup of water for the glutinous rice
  • 1 cup of water for submerging the bowl

Instructions

    Rinse the glutinous rice until the water runs clear.

    Add 1 cup of glutinous rice and 2/3 cup of cold water in a stainless steel bowl.

    Add the stainless steel bowl on top on top of a steamer.

  4. 4

    Add 1 cup of water into the bottom of the pressure cooker.

    Close the pressure cooker lid and seal the venting knob.

    Set the pressure cooker to high pressure for 12 minutes.

    Allow the pressure cooker to natural release.

  8. 8

    Open lid carefully, fluff the rice and serve!
