Prawn Pilau Biryani Rice
Have a delicious dinner ready on the table in no time with quick-cooking prawns and basmati rice. This is one of my favourites!

Ingredients
Quantities are shown as originally provided.
- 3 tbsp oil
- 1 large onion (chopped)
- 4 cloves garlic (minced)
- 1 inch ginger (minced)
- 1 medium stick whole cinnamon
- 3 medium tomatoes (very finely diced)
- 2 cups basmati rice ((washed and soaked for at least 30 minutes before using))
- 12 oz raw king prawns
- 3 cups/750ml water ((IMPORTANT: please read notes if you are changing the serving size))
- 3 tsp salt
- 1/2 tsp turmeric
- 1 tsp ground coriander
- 1 tsp black pepper (coarsely ground is best)

Heat oil in a pot and add the onions, cinnamon, garlic and ginger. Sauté till golden brown.

Add the tomatoes and spices and a splash of water. Cook till the tomatoes break down into a soft mix.

Add the rice, prawns and water. Bring to a boil.

Once at a boil, allow the rice and all the ingredients to cook together.

After 10 minutes, 90% of the water will have evaporated. Cover and bring the heat to the lowest setting. Allow this to steam for 12-15 minutes.
