Easy & Simple Greek Tofu

Ingredients
Quantities are shown as originally provided.
- 1.10 lb smoked tofu (sliced 1/4 inch thick (or sub with extra-firm tofu as a last resort))
- 1 tbsp extra virgin olive oil (for pan frying tofu)
- 2 tbsp extra virgin olive oil
- 6 tbsp lemon juice (freshly squeezed)
- 2 tsp garlic powder
- 2 tsp dried oregano
- 1 tsp onion powder
- 1 tsp dried basil
- 1 tsp salt
- 1/2 tsp black pepper

Slice smoked tofu into 1/4-inch thin strips and pat dry with clean paper towel to remove excess moisture.

In a resealable container, whisk together tofu marinade ingredients. Add sliced tofu and allow this to marinade for at least 1 hour or overnight for best results.

Heat olive oil in a large pan on medium heat. Pan fry tofu until golden brown on each side, approximately 5-7 minutes each side. To reuse the leftover marinade, pour it into the pan after you've cooked the tofu and bring it to a simmer and pour it over the cooked tofu.

Serve hot with your favorite fixings like Greek rice, Greek potatoes, salad and/or tahini dressing.
