Ingredients

Quantities are shown as originally provided.

  • 2 pounds large shrimp, head-on and shell-on
  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • oil
  • 1 head garlic, peeled and minced
  • 2 jalapenos, cut into thin slices
  • 1/2 cup green onions, chopped

Instructions

    Trim tendrils and claws off shrimp and rinse under cold running water. Drain well and pat dry.

    In a bowl, combine flour, cornstarch, 1/2 of the pepper, and 1/2 of the salt. Dredge shrimp in flour mixture until coated.

    In a wide, deep pan over medium heat, heat about 2 inches oil to about 350 F. Add shrimp in batches and cook for about 2 to 3 minutes or until crisp and color changes.

    Remove shrimp from the pan and drain on a colander. Reserve 2 tablespoons of the frying oil.

    In a wide skillet over high heat, add the 2 tablespoons reserved oil and heat until hot. Add garlic, jalapenos, and green onions and saute for about 30 to 40 seconds or until aromatic.

    Add deep-fried shrimp, the remaining 1/2 of the salt and 1/2 of the pepper. Toss for about 20 to 30 seconds until well distributed. Serve hot.
