Sigara Borek (Feta Filled Pastry)

Turkish sigara borek are tasty pockets of tangy feta with gooey yogurt, herbs, and dried fruit baked into crispy, buttery filo cigars.

Ingredients

  • 6 sheets of filo pastry dough ((see Note 1))
  • 2 large eggs
  • 7 oz feta cheese
  • 12 dried apricots (chopped)
  • 3 tbsp Greek yogurt
  • 1 tsp dried mint
  • nigella or sesame seeds (for garnish)

Instructions

    Line a baking sheet with parchment paper or silicon mat. Preheat oven to 350°F.

    Let filo dough come to room temperature, keep covered to not dry out. In a bowl whisk the eggs and set aside.

    In a bowl mix together the feta cheese, apricots, yogurt and dried mint until blended. It will be a thick paste with some crumbles.

    On a clean work surface cut a filo sheet into quarters. Working with one quarter at a time (keeping others covered), take a heaping teaspoon of the cheese filling and mold into a cigar shape in your hand. Place it on the bottom edge of the filo. Fold the bottom corners up and over the filling and roll up the pastry from the bottom, tucking in sides as you roll.

    Brush some of the beaten egg on the last edge of filo and roll to seal. Place on prepared baking sheet. Repeat until all filling and filo is used.

    Brush the sigara borek with remaining beaten egg and sprinkle the nigella or sesame seeds on top. Bake for 20 minutes until golden brown. Serve immediately.
