Kuih Bingka (Baked Tapioca Cake/ Cassava)
Kuih Bingka Ubi Kayu is made of tapioca/cassava and coconut milk. Originally gluten-free and vegan, this easy recipe yields a soft and chewy kuih that is lightly sweet.

- 5 cups grated tapioca
- 1.5 cups sugar
- 1 tbsp salt
- 2.5 cups coconut milk
- 0.125 tsp yellow food colouring

Grate tapioca and set it aside. Preheat oven at 200 degrees Celsius.

In a large bowl, combine sugar, salt, coconut milk and food colouring. Stir in the sugar and salt until dissolved. Then, add the grated tapioca and mix until well combined.

Transfer the batter to a greased 8"x 8" baking pan. Bake it on the lowest rack of the oven for 1.5 hours or until the surface is dry (not browned). Then, move the baking pan to the highest rack. Bake for another 30 minutes or until the surface turns brown.

Allow Kuih Bingka to cool to room temperature fully. It should take approximately 3-4 hours. Otherwise, it might fall apart when sliced.
