  • 1 (15-ounce) can sweet corn, (drained)
  • 1 (14.75-ounce) can creamed corn
  • 1 cup sour cream
  • ½ cup unsalted butter, (melted)
  • 2 large eggs
  • 1 poblano pepper, (diced)
  • 1 (4-ounce) can diced green chiles
  • 1 (8.5-ounce) box Jiffy corn muffin mix
  • 1 ½ cups shredded cheddar cheese, (optional)

Instructions

    Preheat the oven to 400°F. Grease 9x13-inch baking dish with cooking spray or oil.

    Whisk together the corn, creamed corn, sour cream, melted butter, eggs, poblano pepper, and diced green chiles.

    Add the corn muffin mix and cheese and whisk until well combined.
