Ingredients

Quantities are shown as originally provided.

  • 500 grams chicken pieces marinated in soy sauce and rice wine vinegar
  • 2 tablespoons crushed chili sauce
  • 3 tablespoons Thai sweet chilli sauce
  • 1 large onion sliced
  • 1 red capsicum (bell pepper) sliced
  • 1 carrot julienned or thinly sliced
  • 2-3 spring onions
  • 2 tablespoons oil vegetable or sesame

Instructions

  1. 1

In a bowl, combine chicken pieces with soy sauce and rice wine vinegar. Let it marinate for at least 30 minutes.

  2. 2

Heat oil in a large pan or wok over medium heat. Add the onions, capsicum, and carrot. Stir-fry for 3-4 minutes until they begin to soften.

  3. 3

Push the vegetables to one side of the pan. Add the marinated chicken to the other side and cook for about 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through.

  4. 4

Once the chicken is cooked, add the crushed chilli sauce and Thai sweet chilli sauce. Stir well to combine everything and cook for another 2-3 minutes.

  5. 5

Toss in the chopped spring onions and stir-fry for an additional minute.

  6. 6

Serve the stir-fry hot with steamed rice.
