- 500 grams chicken pieces marinated in soy sauce and rice wine vinegar
- 2 tablespoons crushed chili sauce
- 3 tablespoons Thai sweet chilli sauce
- 1 large onion sliced
- 1 red capsicum (bell pepper) sliced
- 1 carrot julienned or thinly sliced
- 2-3 spring onions
- 2 tablespoons oil vegetable or sesame

In a bowl, combine chicken pieces with soy sauce and rice wine vinegar. Let it marinate for at least 30 minutes.

Heat oil in a large pan or wok over medium heat. Add the onions, capsicum, and carrot. Stir-fry for 3-4 minutes until they begin to soften.

Push the vegetables to one side of the pan. Add the marinated chicken to the other side and cook for about 5-6 minutes, stirring occasionally, until the chicken is browned and cooked through.

Once the chicken is cooked, add the crushed chilli sauce and Thai sweet chilli sauce. Stir well to combine everything and cook for another 2-3 minutes.

Toss in the chopped spring onions and stir-fry for an additional minute.
