- 1 kg Lamb Ribs
- 2 tbsp Olive Oil
- 1 tbsp Paprika
- 1 tsp Salt
- 1 tsp Garlic Powder
- 1 tsp Cumin Powder
- 1 tsp Cayenne Pepper
- 1 tsp Black Pepper
- 1 tsp Oregano

Start by mixing the ingredients in a bowl until they are evenly combined.

Next, take the lamb ribs and apply the marinade generously. Use your hands or a brush to make sure the ribs are thoroughly coated with the spice mixture, ensuring an even coverage on all sides.

Once coated, cover the ribs and let them marinate for at least 1 hour to allow the flavours to infuse into the meat. If you have more time, marinating them longer will enhance the flavour even more.

Preheat your oven to 180°C (350°F) or gas mark 4. Once it’s preheated, place the lamb ribs on a roasting tray and cover them with foil. Roast the ribs for 2 hours, ensuring they cook through and become tender.

After 2 hours, remove the foil and continue roasting for an additional 30 minutes to allow the ribs to develop a crisp, golden exterior. This step will give the ribs a beautifully caramelised finish.
