- 2 cups cold heavy cream

- 1½ cups unsweetened shredded coconut

Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each. Stir in the orange zest. In a separate bowl, whisk together flour, baking powder, and salt. Add the dry ingredients to the butter mixture in three parts, alternating with the milk. Don’t overmix—just blend until smooth. Divide the batter evenly between the pans. Bake for about 30–35 minutes or until a toothpick comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
