Ingredients

  • 4 servings of noodles of your choice, we prefer Barilla protein spaghetti noodles, but in Thailand they use rice noodles
  • 1 lb ground turkey
  • 2 tbsp minced cilantro stems
  • 2 tbsp oyster sauce
  • 2 tsp white pepper powder
  • 5 garlic cloves, minced
  • 2 cups of bean sprouts
  • 4 green onions, chopped into 1/4 in. pieces
  • Handful of cilantro, roughly chopped
  • 1/2 cup crushed peanuts
  • Thai chili powder, to taste (It’s super powerful, so be careful!)
  • 2 tsp or to taste per bowl of Dark Thai soy sauce
  • 1 tsp. fried garlic or so for each bowl

Instructions

  1. 1

Make the noodles according to package instructions.

  2. 2

Make super quick meatballs by combining the ground turkey, cilantro stems, white pepper, garlic and oyster sauce.

  3. 3

Roll into balls, and while the water for the noodles is boiling, plop the meatballs into the boiling water.

  4. 4

It only takes a few minutes to cook them, and they should rise to the surface when cooked.

  5. 5

Drain the noodles and meatballs into a colander.

  6. 6

Add noodles and meatballs to each bowl along with all toppings to taste and preference.

  7. 7

    Enjoy!
