Sweet & Nutty Chocolate Covered Dates

These nutty chocolate coated dates are a perfectly sized sweet treat! You need only 3 ingredients to make these delicious morsels, so they are super easy to make! They make a great snack, are a nice end to a meal, and they look fancy enough to serve when company comes over!

Ingredients

Quantities are shown as originally provided.

  • 6 Medjool dates
  • 1/4 cup dark chocolate chips
  • 1/4 cup almonds
  • Whole almonds/nuts for stuffing inside the dates

    Remove the pit from a date by making a cut on one side of the date with a paring knife until it hits the pit. Gently pry the date open and remove the pit, pressing the date closed after. Repeat with the remaining dates. Set aside.

    If desired, stuff each date with one or two whole almonds before pressing the date closed.

    Chop almonds into fine pieces. Place in a bowl and set aside.

    Place chocolate chips in a heat safe bowl set over a measuring cup filled with just-boiled water. Allow the heat to melt the chocolate chips, stirring every couple of minutes until all the chips are melted.

    Working one at a time, coat each date in the melted chocolate, making sure all sides are covered.

    Place the chocolate coated date into the bowl of chopped almonds and coat well, gently pressing the nuts into the chocolate. Set aside on a dish.

    Refrigerate the dates for at least 30 minutes for the chocolate to harden before serving. Store leftover dates in a sealed container in the fridge.
