Traditional German Meatloaf Recipe – Oma's Falscher Hase Rezept
This German meatloaf (falscher hase) is my easy family favorite ... savory, slightly smoky from bacon, and perfect hot or cold.

Ingredients
Quantities are shown as originally provided.
- 2 pounds (900 grams) lean ground beef (or half beef and half pork)
- 2 large eggs
- 1 onion, finely chopped (browned in oil if desired)
- ½ cup (60 grams) breadcrumbs or 1 Kaiser roll
- 1½ teaspoons (9 grams) salt
- ½ teaspoon (1 gram) black pepper
- 3 hard-boiled eggs, peeled (optional)
- 4 strips bacon

Preheat oven to 375°F (190°C).

In a large bowl, gently mix the ground meat, eggs, onion, bread crumbs, salt, and pepper until just combined.

If using hard-boiled eggs, flatten the meat into a square, place eggs in a line down the center, and fold the meat over to enclose. Otherwise, simply shape into a loaf.

Place loaf into a large shallow baking dish, such as a 9x13-inch casserole.

Lay bacon strips over the top of the meatloaf.

Bake for 50 to 60 minutes or until internal temperature reaches 165°F (74°C).
