- ½ ginger (finely minced)
- 1 tbsp garlic (finely minced)
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1½ tsp cornstarch
- cilantro (optional, to taste)
- 2 tbsp oil
- 30 oz tomatoes
- 1 tbsp oil
- 1 onion (finely chopped)
- 4 cloves garlic (minced)
- 1½ tsp salt
- black pepper (to taste)
- chili flakes (optional, to taste)
- 14 oz uncooked spaghetti

Make the meatballs

In a mixing bowl, combine ground pork with all meatball seasonings.

Stir in chopped coriander until well mixed.

Cover and refrigerate for 30 minutes.

Shape the mixture into small, bite-sized balls.

Heat oil in a pan over medium heat and pan-fry until golden brown and cooked through.

Transfer to a plate and set aside.

Make the tomato sauce

Lightly score the tops of the tomatoes with a sharp knife.

Peel while still warm, then mash the flesh.
