Ingredients

  • 4 chicken drumstick(s)
  • 1 tsp salt
  • 1 tbsp turmeric powder
  • 1.5 cups cooking oil
  • 5 shallot(s)
  • 2 garlic clove(s)
  • 2.5 cm ginger
  • 5 tbsp chilli boh
  • 2 lemongrass stalk(s)
  • 0.5 tbsp tamarind paste
  • 0.5 yellow onion(s)

Instructions

    Combine the chicken drumstick, salt, and turmeric powder in a big bowl. Set aside and let them marinate for at least 15 minutes. Deep fry at medium to high heat until cooked. Set chicken aside, along with 1/2 cup of oil used for deep frying.

    Blend the shallots, garlic and ginger to create a paste. Then, set aside.

    Heat the oil used in step 1 to medium heat. Fry the cili boh (chili paste) until the oil separates from the chili. Remove the pan from the stove and reduce the heat if the cili boh begins to burn.

    Add in the blended aromatics and bruised lemongrass. Sauté for another 5 to 6 minutes.

    Then, add the tamarind paste and mix until well-combined. Add the fried chicken drumsticks and let it simmer for another 5 minutes.

    Lastly, add in some yellow onion ringlets and stir for another 5 minutes. Turn off heat and serve. Enjoy!
