Char Siu Chicken
Juicy char siu chicken made with a sticky red marinade and grilled to perfection. Perfect with rice, noodles, or just on its own.

Ingredients
Quantities are shown as originally provided.
- 4 chicken thighs (boneless, skin-on)
- 3 cloves garlic (minced)
- 2 tbsp light soy sauce
- 1 tbsp oyster sauce
- 2 tbsp hoisin sauce
- 2 tbsp shaoxing wine
- 1 tbsp brown sugar
- ½ tsp Chinese five-spice powder
- a few drops of red food coloring (optional, add as needed)

Make the marinade. Stir all marinade ingredients in a bowl until smooth and the sugar is dissolved.

Marinate the chicken. Add chicken thighs and coat well. Cover and chill for at least 4 hours or overnight.

Bring to room temp. Let the marinated chicken sit out for 15 minutes before cooking.

Cook the chicken. Grill over low heat, skin-side down first, flipping occasionally until caramelized. Or roast at 180°C (350°F), flipping halfway. Broil 1–2 minutes at the end for extra color.

Slice and serve. Rest the chicken for 5 minutes, then slice and serve warm.
