Peanut Butter Miso Ramen

Ingredients
Quantities are shown as originally provided.
- ¼ cup white miso paste
- 1 Tablespoon creamy peanut butter
- ½ Tablespoon soy sauce
- 1½ teaspoon granulated sugar
- ¾ cup water ((or to preference))
- 2 packs instant ramen
- 3 cloves garlic, minced
- 1 Tablespoon ginger, peeled and minced ((about a ½ inch knob))
- 2 large eggs ((soft boiled))
- Bok choi ((cleaned, cut, and blanched))
- mushrooms ((cleaned, cut, and blanched))
- 2 stalk green onions, sliced ((marinated with a pinch of salt and 1 tsp sesame oil))

Mix together miso paste, peanut butter, soy sauce, and sugar. Slowly add water to the paste while mixing . Set aside as needed.

Boil ramen with water according to package recommended time, about 3-5 minutes until just al-dente. Drain.*Don't add any of the inclusive packets to your ramen because we are making our own sauce!*

Sauté garlic and ginger in a sauté pan, over medium heat, with a small amount of oil until fragrant. Add prepared sauce and cook while stirring until it's hot and slightly thickens. *You can adjust the thickness of the sauce by adding more water. You can also add more soy sauce if you want the sauce to be saltier.*

Add cooked ramen noodles and toss until the ramen is evenly coated with sauce.

Serve immediately and garnish with your favorite toppings or the optional toppings we recommended above!
