Ingredients

Quantities are shown as originally provided.

  • 10 slices of bacon of your choice (we like thick-cut)
  • juice from 2 limes
  • 1-2 tsp. sugar
  • 1-2 tbsp Fish Sauce
  • 2-3 tbsp. Thai Chile Paste (Prik Pao)
  • 2-5 Thai chilies finely chopped
  • 2 shallots, sliced into strips
  • 5 garlic cloves, finely chopped
  • handful of coarsely chopped cilantro

Instructions

  1. 1

Make the bacon whatever way you prefer whether it’s baking it in the oven at 350 degrees for about 15 minutes, microwaving it about 1 minute per slice, or cooking it on the stove top.

  2. 2

Once bacon is cooked (I prefer it crispy for this dish), chop it up into bite-sized pieces as show in pictures in post.

  3. 3

While bacon is cooking, wisk in a medium bowl the lime juice, sugar, fish sauce, thai chili paste, Thai chilies, shallots and garlic. Add the bacon and sprinkle cilantro on top.

  4. 4

Eat it with jasmine rice, and we like it with a Thai-Style Omelette too!

  5. 5

    Enjoy!
