Ingredients

Quantities are shown as originally provided.

  • 600 g Chicken Thighs
  • 200 g Greek Yoghurt
  • 2 cloves Garlic (minced)
  • 1 tsp Cumin Powder
  • 1 tsp Paprika
  • 1/2 tsp Coriander Powder
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Chilli Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tbsp Lemon Juice
  • 1 tbsp Olive Oil

Instructions

  1. 1

In a bowl, mix together the Greek yoghurt, minced garlic, ground cumin, paprika, ground coriander, ground turmeric, chilli powder, salt, black pepper, lemon juice, and olive oil.

  2. 2

Add the chicken thighs to the bowl, ensuring they are coated evenly with the yoghurt marinade. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight to allow the flavours to develop.

  3. 3

Preheat the oven to 200°C (180°C fan).

  4. 4

Place the marinated chicken thighs on a baking tray lined with parchment paper, ensuring they are spaced apart.

  5. 5

Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the edges are slightly charred.

  6. 6

Once cooked, remove from the oven and allow to rest for a few minutes before serving.

  7. 7

Serve the yoghurt-marinated chicken thighs hot, garnished with fresh coriander if desired. Enjoy with rice, salad, or your favourite side dishes.
