- 1 ½ lbs walleye fish fillets
- ½ cup all-purpose flour
- 1 tsp garlic powder ½ tsp ground black pepper
- ¾ tsp salt
- 2 large eggs, beaten
- 1 ½ cups saltine crackers, crushed (or Italian-style cracker crumbs)
- 1 ½ cups vegetable oil (for frying)
- 1 lemon, cut into wedges

Pat dry your walleye fillets with a paper towel. Dip each one into the flour mix, then the eggs, then press into the cracker crumbs. Make sure each piece is fully coated for that crisp bite.

Heat vegetable oil in a deep skillet or deep fryer to about 350°F (medium-high heat). Carefully place a few fillets at a time into the hot oil. Don’t overcrowd. Fry each side for 3–4 minutes or until golden brown and cooked through. The edges will get crispy while the inside stays flaky.
