Ingredients

Quantities are shown as originally provided.

  • 1 tsp butter (for greasing the pan)
  • 1 cup all-purpose flour (or sub with whole wheat flour)
  • 1 pinch salt
  • 2 tbsp matcha powder
  • 1 cup milk (or plant-based milk)
  • 2 large eggs
  • 1/4 cup water (cold)
  • 2 tbsp white granulated sugar (or maple syrup/honey)
  • 1 tbsp butter (melted )
  • 1 tsp vanilla extract

Instructions

  1. 1

In a large mixing bowl, whisk together the flour and salt. Sift in the matcha powder and whisk it into the flour mixture.

  2. 2

Then add in the wet ingredients. Whisk together until batter comes together. Do not over mix. It should be runny and not thick.

  3. 3

Grease a medium size pan (about 8-inches wide) and bring to medium heat.

  4. 4

Once pan is hot, pour 1/3 cup into the pan. Swirl the batter to form a thin crepe. If you have a crepe spreader that would be the best tool to help flatten the batter. Fry until the bottom is cooked.

  5. 5

Flip over and fry on the other side until cooked. Repeat this for the remaining batter.

  6. 6

Enjoy with your favourite toppings, such as nutella, nut butter, maple syrup, honey, sugar and fresh fruit (like bananas or berries).
