Banana & Cucumber Sandwich Rolls

Banana and Cucumber sandwich rolls are extremely easy to make. Strictly no skills are required. Simply flatten the bread slices. Spread with your favourite spread and roll up the bread slices with a peeled banana or unskinned cucumber. Then cut into bite size pieces. They make great healthy lunchbox and snacks for kids too. Just chill them in the refrigerator until needed.

Ingredients

Quantities are shown as originally provided.

  • 2 slices white bread
  • 2 slices wholemeal bread
  • 1 tablespoon peanut butter (crunchy)
  • 1 tablespoon cream cheese
  • 1 banana (peeled)
  • 1 green zucchini (washed and drained dry)

Instructions

    Cut the crust off all sides of the white and wholemeal breads. Set aside.

    Lie first the white sandwich bread on top of each other overlapping a bit.

    Using a rolling pan, flatten the two slices of bread as thin as possible. This also helps to join the two slices of bread together.

    Spread thickly with crunchy peanut butter. ( You may use any of your favourite spread ).

    Place the peeled banana at one end of the bread.

    Roll it up FIRMLY.

    Wrap with cling wrap and chill in the refrigerator until needed.

    To make cucumber sandwich rolls, lie 2 slices of wholemeal bread on top of each other overlapping a bit.

    Use a rolling pin to flatten the 2 slices of bread. This helps to join the two pieces of bread together.

    Spread thickly with Cream Cheese.

    Place the unskinned green zucchini at one end of the bread. Roll up the whole cucumber inside FIRMLY.

    Wrap with cling wrap and chill in the refrigerator until needed.

    Cut the banana and cucumber sandwich rolls into 4 bite size pieces each that end up resembling sushi rolls.

    These sandwich rolls make good lunchbox snacks as they can be prepared ahead of time. Just chill them until needed.
