- 1/4 cup extra virgin olive oil
- 1 tbsp apple cider vinegar
- 1 tsp fresh lemon juice
- 1/2 tbsp dijon mustard
- 1 tbsp agave syrup
- 1 clove garlic
- pinch sea salt
- pinch black pepper
- 2 cups bagged spinach
- 1/2 red onion
- 1 red apple
- 4 ounces Manchego cheese
- 3 pitted dates
- 10 walnuts

To make the apple cider vinaigrette add 1/4 cup of extra virgin olive oil to a bowl, also add 1 tablespoon of apple cider vinegar, 1 teaspoon of fresh lemon juice, 1/2 tablespoon of dijon mustard, 1 tablespoon of agave syrup, lightly season with sea salt and freshly cracked black pepper, whisk until well combined, cover with seran wrap and set aside

Add 2 handfuls of bagged spinach to a large shallow bowl, thinly slice 1/2 of a red onion and add on top of the spinach, core 1 red apple and cut into 1/2 inch thick cubes, drizzle the apples with lemon juice to prevent browning, add the apples on top of the onions, cut 4 ounces of Manchego cheese into 1/8 inch cubes and add on top of the apples, finely chop 3 pitted dates and sprinkle over the salad, break apart about 10 walnuts over the salad, season everything with sea salt and freshly cracked black pepper, top off the salad with the apple cider vinaigrette, enjoy!
