Freekeh with Vegetables (Vegan)

It’s still lent season, and I was thinking of a vegan dish that I can share with you all. So I thought of making freekeh with vegetables. Freekeh is a grain that I have used before in other recipes, as in soups, meat, and chicken. But today I made it in this vegan recipe that includes vegetables.

Ingredients

Quantities are shown as originally provided.

  • One onion finely cut
  • 3 carrots peeled and finely cut
  • ½ cup of frozen peas
  • 1 cup of freekeh
  • 1 cup of boiled water
  • 2 tablespoons olive oil
  • ½ teaspoon allspice powder
  • Salt

Instructions

    Soak freekeh in water for up to 15 minutes.

    Sauté chopped onions with olive oil until onions turn golden brown.

    Add vegetables: carrots and peas over the sautéed onions, mix everything well together and cook uncovered for about 10 minutes with occasional stirring.

    Rinse freekeh from water and add over vegetables, integrate everything well together so that the freekeh is well coated with the oil and vegetables.

    Pour boiled water, salt, and allspice. Mix everything well.

    Once it starts boiling, cover the pot and let it simmer on low heat for about 20 minutes.
