Lomo Saltado
A yummy recipe for my version of lomo saltado that includes beef sirloin, tomatoes, and french fries.

Ingredients
Quantities are shown as originally provided.
- ¾ lb beef sirloin (cut into strips)
- 1 tsp salt
- 1 tsp pepper
- 1 tsp cumin
- 2 tsp rice wine vinegar
- 2 tbsp soy sauce
- ¼ large red onion (cut into chunks)
- 2 roma tomatoes (cut into 4 pieces)
- 2 cloves garlic (minced)
- 1 tbsp aji amarillo paste
- 1 tsp beef base
- 10 oz french fries (frozen)
- 1 tbsp cilantro (minced)
- 1 lemon (optional)
Instructions

Prepare the French fries according to the instructions on the package. Set aside.

Combine salt, pepper, cumin, vinegar, and soy sauce in a bowl. Add the beef sirloin strips and marinate for 10 minutes.

Heat 1 tablespoon of olive oil over high heat. Add the beef sirloin and cook for 2-3 minutes on each side until brown.

Add the red onion, tomatoes, aji amarillo paste, beef base, and garlic. Cook for 1-2 minutes until the tomatoes are tender.

Add the french fries and cook for ~1 minute.

Garnish with cilantro and serve over white rice.

Optional: Squeeze some lemon over the lomo saltado before serving.
