Ingredients

  • 2.5 cups lukewarm water
  • 2 tbsp sugar
  • 1 tbsp kosher salt
  • 1 tbsp fish sauce
  • ~600 g chicken wings
  • 1 tsp garlic powder
  • 1 tsp chicken bouillon powder
  • 1/2 tsp baking powder
  • 1/2 tsp turmeric
  • 1/4 cup cornstarch
  • ~2 tbsp carbonated water, just enough to achieve a paint-like batter consistency<br>
  • 1 tbsp cilantro, chopped
  • 1 tbsp green onion, chopped
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 clove garlic, minced
  • <em>Optional</em>: 1 thai chili pepper, minced

Instructions

    In a large bowl, combine together the kosher salt, fish sauce, sugar, and lukewarm water. Mix thoroughly until the salt and sugars have dissolved.

    Add the chicken wings into the brine mixture. Cover, and let brine for 1-2 hours.

    Combine together the cilantro, green onion, brown sugar, lime juice, fish sauce, minced garlic, and Thai chili pepper in a bowl. Season to taste. Mix well and set aside.

    Drain the brining liquid.

    To the wings, add in the garlic powder, chicken bouillon powder, turmeric, baking powder, cornstarch, and carbonated water. Mix well to coat the chicken until you achieve a thin, paint-like batter consistency.

    Fry the battered chicken in hot oil for 10-12 minutes, or until golden brown in color and cooked all the way through. Let cool slightly on a wire rack.
