Roasted Cabbage Steaks
Roasted cabbage steaks make a perfect vegetable side dish, but they're also delicious enough to be a meal! Preparation is also a breeze! Serve them roasted simply with salt and pepper and other dried seasonings, or top them with a rich bolognese sauce, stew, or your favorite stuffed potato toppings like butter, sour cream, bacon, and chives! Take this ordinary vegetable and make it extraordinary!

Ingredients

- 1 head cabbage
- Extra light olive oil
- Salt
- Black pepper
- Grated Parmesan cheese
- Garlic powder
- Onion powder
- Chili powder
- Cumin
- Sour cream
- Sour cream or Greek yogurt
- Crumbled cooked bacon
- Chopped scallions

Preheat oven 400F/200C.

Cut the head of cabbage in half (I cut with the cabbage with the core facing up so I can see where halfway is.).

Cut each half of the cabbage into 2-3 steaks, about 1-inch in thickness (depending on how big the cabbage is). Do not worry if the end piece is smaller than 1-inch.

Lay the cabbage steaks on a baking sheet (line with parchment paper or foil for easier clean-up). Brush the top of the steaks with oil or butter.

Season the cabbage steaks with salt and pepper. Add other dry seasonings like onion powder, garlic, powder, cumin, etc., or fresh grated Parmesan cheese, if desired.
