- 1 tbsp Fennel Seeds
- 1 tbsp Cumin Seeds
- 1 tbsp Coriander Seeds
- 1 tsp Black Peppercorns
- 1 inch piece Cinnamon Stick
- 2 Black Cardamom
- 5 Green Cardamom
- 5 Cloves
- 2 Bay Leaves
- 1 Star Aniseed
- 1 tbsp Chilli Powder
- 1 tbsp Kashmiri Chilli
- 1 tbsp Ginger Powder
- 1 tsp Turmeric Powder

Add the fennel seeds, cumin seeds, coriander seeds, black peppercorns, cinnamon stick, black cardamom, green cardamom, cloves, bay leaves, and star aniseed to a dry blender or spice grinder.

Blend the whole spices until they turn into a fine powder. Make sure the mixture is smooth and there are no coarse bits left.

Transfer the freshly ground whole spice powder into a clean, dry mixing bowl.

Add the chilli powder, Kashmiri chilli, ginger powder, and turmeric powder to the bowl with the ground whole spices.
