  • 1 Lb jumbo (10/12) shrimp (peeled and deveined)
  • 1 Tsp hot sauce (plus more, as desired)
  • 2 Tsp Kosher salt (divided into 1 tsp + 1 tsp, to taste)
  • 3 Tsps Italian seasoning (divided into 1 1/2 tsp + 1 1/2 tsp)
  • 2 Tbsp olive oil (as needed)
  • 3 Tbsp salted butter (divided into 2 tbsp + 1 tbsp)
  • 2 cloves garlic (minced)
  • 2 C baby spinach (chopped roughly)
  • 1 pint half-and-half
  • 4 Oz cream cheese (room temperature)
  • 2 medium vine-ripened tomatoes (chopped)
  • 1 Tsp black pepper (freshly cracked )

Instructions

    First, grab those jumbo shrimp and pat them dry with a paper towel. Season them up with half the salt and Italian seasoning, then drizzle a bit of olive oil and toss them in that fiery hot sauce. Give them a good stir to coat everything evenly.

    Heat a large skillet over medium-high heat and melt 2 tablespoons of butter. Once it's hot and ready, add the shrimp. Let them cook undisturbed for about 2 minutes, then flip them over and give them another 2-3 minutes until they’re just cooked through. Remove the shrimp from the pan and set them aside.

    Now, get your pasta going according to the package directions. This should time out pretty well with the sauce.

    In the same skillet, add the remaining tablespoon of butter. Once it’s melted, toss in the minced garlic and stir until it’s fragrant—just about a minute or so. Then, add the chopped spinach. Stir it around until the spinach wilts down nicely.

    Pour in the half-n-half and add the rest of your seasonings. Give it a good stir, then start adding the cream cheese in small chunks, stirring constantly to help it melt smoothly into the sauce.

    Once the cream cheese is melted and the sauce is smooth, toss in the chopped tomatoes and cooked shrimp. Stir everything together until it’s all well combined. Taste the sauce—if it needs more seasoning, now’s the time to add it. If you like it spicy, add a few more drops of hot sauce. Finally, stir in the cooked pasta until it’s coated in that creamy goodness.

    Finish with a sprinkle of freshly cracked black pepper and serve hot. If you’re like me, add a little extra hot sauce for that final kick. Dassit!
