Rice Krispies Treats
I've been told these are The Best Ever, but I dunno.

Quantities are shown as originally provided.
- 1 12-oz box Rice Krispies cereal
- 1 16-oz bag marshmallows
- 1 16-oz bag miniature marshmallows
- 1/2 C salted butter
- 1/2 Tsp vanilla extract
- 1/2 Tsp vanilla bean paste

Line a deep 9x13" pan with parchment paper - or grease it REALLY well - and set it aside.

In a large, deep pot over medium-low heat, melt the butter. Once it’s melted, drop the heat to low. You will not raise the heat again, and you'll turn it off soon. This is key.

Add the regular-sized marshmallows and both vanillas to the melted butter. Stir constantly until the marshmallows are silky smooth and fully melted.

Turn off the heat, then toss in half the mini marshmallows. Stir just until they start to soften, then remove the pot from the heat.

Pour in all of the Rice Krispies cereal. Gently fold everything together until the cereal is fully coated in the marshmallow mixture. Let the residual heat help with this step.

Transfer the mixture into your prepared pan. Spray your fingers with cooking spray (or butter them lightly), and gently press the mixture into the pan. Whatever you do, don’t press too hard! DO NOT PRESS HARD or you'll end up with tough treats.

Cover the pan tightly and let it cool for 4-6 hours until completely set.

Butter a sharp knife and carefully slice through the Rice Krispies treats, using the blade to glide through. Store in an airtight container and enjoy within a couple of days. Dassit!
