Ingredients

1
  • 1 chicken breast
  • 1/2 cucumber, julienned
  • 1 serving potato starch noodles (or any noodle you prefer)
  • white sesame seeds (for garnish)
  • 1/2 tbsp peanut butter
  • 1+1/2 tbsp sesame dressing
  • 1/2 tsp sesame oil
  • 1 tbsp black vinegar
  • 1 tsp light soy sauce
  • 1 tsp sugar
  • 2 tbsp water
  • salt to taste

Instructions

  1. 1

Season the chicken breast with some salt and steam it for around 9-12 minutes depending on the size. Cool the chicken down with cold water before shredding it to pieces with fingers.

  2. 2

Prepare the sesame sauce by combining all the ingredients listed above.

  3. 3

Cook your choice of noodle according to the package instructions. Drain and rinse noodles thoroughly under cold water. Mix in a teaspoon of sesame oil to prevent the noodles from sticking together.

  4. 4

Assemble the noodles by mixing shredded chicken, noodles, julienned cucumber and sauce, mix everything together and garnish with sesame seeds. Enjoy!
