Ingredients

Quantities are shown as originally provided.

  • 10 oz somyeon noodles
  • 1 tbsp sesame seeds (grounded)
  • 2 large eggs
  • 4 green onion (chopped)
  • 1/2 cup kimchi (well-fermented)
  • 2 tbsp gochujang
  • 1 tsp white granulated sugar (or cane sugar)
  • 2 tsp sesame oil
  • 14 cups water (cold)
  • 7 tablets coin broth (seafood / anchovy / beef kind)
  • 6 pieces dried kelp (optional)
  • 1 small onion (chopped)
  • 2 green onion (chopped)
  • salt (to taste, if needed)

Instructions

  1. 1

In a large pot, combine cold water, anchovy/seafood coin broth tablets, dried kelp, onion, and green onion. Bring to a boil on medium-high heat, then reduce to medium heat and simmer for 20 minutes uncovered, stirring occasionally to dissolve the tablets. Once reduced, season with salt to taste if needed.

  2. 2

Strain out the onions and kelp from the broth with a slotted spoon. Cover the broth to keep hot and set aside.

  3. 3

In a small bowl, combine the sauce ingredients as listed above and set aside.

  4. 4

In a small pot, boil the eggs for 7-8 minutes for soft-boiled eggs or 10 minutes for hard-boiled eggs. Optional: Before boiling, add 1 tsp of salt and 2 tsp white vinegar to the water - this makes the shell peeling process easier. Transfer the boiled eggs to an ice bath. Then peel and slice the eggs into halves and set aside.

  5. 5

Lastly, boil the somyeon noodles for 2-3 minutes, or until al dente. Then strain and rinse under running cold water while rubbing the noodles together with clean hands. Then strain the noodles to remove any excess water.

  6. 6

Divide the strained noodles between two large serving bowls. Top with the equal portions of sauce and eggs. Then ladle the hot broth into each bowl, around the noodles and enjoy hot!
