Ingredients
Quantities are shown as originally provided.
- 1 large Fuji apple (peeled and diced)
- 2 tablespoons light brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 2 eggs (room temperature)
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoon baking powder
- 1/2 cup whole milk
Instructions
- 1
Heat a saucepan over medium-high heat and add the apple, light brown sugar, and ground cinnamon. Stir and cook the ingredients for 2 to 3 minutes until the sugar melts. Turn off the heat and set the filling aside.
- 2
Preheat the oven to 350°F (177°C). Grease two small loaf pans (5.75" x 3" or 14.6 x 7 cm) with butter. You can also use one regular loaf pan.
- 3
In a large mixing bowl, beat together the light brown sugar, ground cinnamon, granulated sugar, and unsalted butter until smooth. Whisk in the eggs and vanilla extract.
- 4
Sift the all-purpose flour and baking powder into the mixture, whisking continuously while adding the milk. Continue mixing until all ingredients are well combined.
- 5
Divide the batter into two equal portions. Transfer half of the batter to the baking pan and add a layer of apple filling. Cover the filling with the remaining batter, then top with additional apple pieces. (Repeat this process with the remaining batter and filling.)
- 6
Bake for 35 minutes. Check if the cake is cooked by inserting a toothpick into the center; it should come out clean. Allow the bread to cool in the pan for 10 minutes before unmolding and slicing. It tastes best when fresh and warm out of the oven.
