Ingredients

Quantities are shown as originally provided.

  • 2 cups cooked jasmine rice. * See notes on rice below
  • 2 eggs
  • ¼ cup oil  (vegetable, coconut, canola, or grape seed oil)
  • 6 ounces of leftover roasted meat like Rotisserie chicken, Roasted duck, pork, or Thanksgiving turkey meat
  • 2 tablespoons Tom Yum Paste (Aroy D or Mae Sri Brand)
  • 2.5 tablespoons fish sauce
  • 1 tablespoon fresh lime juice
  • 2 teaspoons sugar
  • ½ cup tomato chopped into 1-inch pieces
  • ½ cup mushroom sliced long and thin
  • 1 tablespoon kaffir lime leaves very finely sliced, around 3-4 leaves
  • ½ cup shallots, long and thinly sliced
  • 1/3 cup green onions chopped into ½ inch pieces
  • ¼ cup cilantro, chopped

Instructions

    Heat a wok or large skillet on medium-high heat and wait until it’s warm before adding oil. Add the garlic and shallot/onion, stir, and let cook for 1 minute. Use avocado, coconut, canola, or vegetable oil.

    Move the garlic and shallot slightly to the side of the wok, add the eggs, and scramble lightly for 1 minute. Do not stir it too often; you want to leave large chunks of eggs intact.

    Add the turkey and stir. Fry everything in the wok together for 1 minute.

    Add the Tom Yum paste, break up the chunks, and stir well with the food in the wok. Turn the temperature to medium heat if the paste cooks too fast. Add 1-2 tablespoons of water if the pan looks too dry.

    Add the mushroom, stir, and cook for 1 minute, just enough to let everything lightly cook together before adding more ingredients.

    Add the rice, fish sauce, lime juice, and sugar and stir for 2-3 minutes. Break up the rice chunks well and spread everything evenly on the work surface to let out the moisture so the fried rice won't get too mushy.

    Turn the heat to high, and add the tomato and green onions, kaffir lime leaves, and cilantro. Stir well together, and cook for 1 minute.

    Give it one last stir before turning the heat off, and place the fried rice on a serving plate. Seasoned with more fish sauce, lime juice, sugar, and spicy chilis! Enjoy your new favorite stir-fry!
