Ćevapi (Balkin Grilled Sausage)
Cevapi is a grilled Balkan sausage seasoned with paprika and garlic, usually served with ajvar pepper relish and pita, flatbread, or lavash.

Ingredients
Quantities are shown as originally provided.
- 1 lb ground beef
- 1 lb ground lamb ( or pork)
- 3 cloves garlic (minced)
- 3 tbsp water
- 2 tsp sweet paprika
- 1 1/2 tsp kosher salt
- 1 1/2 tsp baking soda
- 1 tsp black pepper
- Ajvar Roasted Red Pepper Relish
- Sliced White Onion
- Pita
- Lavash

Mix all of the ingredients in a large bowl. Cover and let rest minimum 4 hours or overnight.

Use 2 tablespoons per sausage and shape by hand into 3-inch long sausages.

Cut open a large zip-top bag (or use a sturdy sheet of plastic wrap) so it lies flat on the counter. Place a portion of the meat mixture along one edge, forming a rough log shape with your hands.Fold the plastic over the meat. Position the flat edge of a spatula or bench scraper against the fold, then press down firmly while rolling the meat away from you. The pressure compacts the mixture into a tight, even cylinder and pushes out any air pockets.Unroll the plastic, cut the shaped sausage to size if needed, and repeat with the remaining mixture.

Clean grill and heat to 400°F (or use grill pan on stovetop). Spray cooking spray on grill and cook sausages 3-4 minutes per side.

Serve with warm bread of choice (lepinja (Balkan flatbread), pita or lavash) and ajvar sauce. Sliced onions and tomatoes are also suggested.
